CHOCOLATE SURPRISE Easter eggs!



One of my favourite memories from easter is getting the chocolate eggs with a gooey surprise in the middle. This recipe is delicious, gooey, crunchy and creamy all at the same time! These chocolate surprises are simple to make, and all ingredients can be purchased from your local bulk food store. I highly recommend doing this to save your cash and plastic waste.

If you don't like peanut butter and want to use a different filling make sure to read my 'Notes' section below.

Ingredients:

  • 1 cup (250g) of dark or sugar-free chocolate

  • 30-40 dates

  • 30-40 hazelnuts

  • 1/2 cup of thick natural peanut butter *see notes


Method:

  1. Line a large baking tray or dish with non-stick paper.

  2. Using a knife or your fingers open the dates. Spoon a small amount of peanut butter into the date and add a hazelnut. Close the date around the butter and nut as best as possible.

  3. Melt your dark or sugar-free chocolate on a low heat in the microwave or using the double boil method on a stove top.

  4. Place your melted chocolate in a mixing bowl.

  5. Dunk your date, nut butter and hazelnut combo in the chocolate until completely coated.

  6. Place back on the tray and decorate if desired, put the tray in the freezer to set.

  7. Remove and eat!!



Notes:

If you are using a different nut butter or one with a thinner consistency, you will need to thicken it to make it more pliable, so it doesn't dribble out of the dates.

I recommend thickening your almond butter or thin peanut butter with a healthy alternative like desiccated coconut or almond flour.
