Gluten free + Dairy-free + Vegan

There is a heaven that comes in the form of fudge chocolate brownies. These beauties are so god damn delicious — gluten-free, refined sugar-free and vegan. Trust me you will LOVE them. If you are sensitive to gluten make sure to buy gluten-free oats, pure oats naturally do not contain gluten but are often made in factories that use gluten products.
If you are celiac you can replace the oat meal for a substitute like buckwheat flour or plain GF flour. I haven't tried the substitutes, but I am confident in them providing good results.
Ingredients:
1 cup of oatmeal ( blended whole oats )
2 tbsp ground flax
1 cup of walnuts
1/2 cup dark vegan chocolate chips
1/2 tsp salt
1 cup of pitted dates ( soaked in water )
1 tsp vanilla extract
1/4 cup coconut oil
1/3 cup almond butter
1/3 cup coconut milk ( I used canned full fat coconut milk )
1/4 water

Directions:
Soak 1 cup of dates in 1 cup of warm water for 30 mins or longer.
Preheat your oven to 170 degrees fan forced.
Line or grease a baking dish, I used a silicone square baking dish.
In a large bowl mix together the oatmeal, salt and ground flax.
Once your dates have soaked for 30 mins, add them to a blender with 1/2 cup of the date water you soaked them in.
Add the remaining wet ingredients to the blender almond butter, coconut oil, vanilla extract, coconut milk and water. Process until a smooth texture.
Add the wet ingredients from your blender to the dry ingredients and mix well. Stir through the walnuts and dark chocolate chips.
Bake in the oven for 30-35 minutes, remove when cooked.
Let cool and slice YUM!!
