
Gluten-free, flour free, refined sugar-free & vegan!
Anyone else a confessed chocolate addict? On Monday as I was sourcing inspiration for my next baking endeavour until I came across the blondie... how have I been living my life without knowing these beauties existed! Blondies are like the perfect mix between brownies and cookies. They melt, crumble and ooze. This recipe is flour-free and good for the environment :) All ingredients can be purchased from the bulk food store, keeping the recipe waste free yay. I recommend storing them in the fridge after baking. They will stay fresh in the refrigerator for around five days or frozen for 3+ months.
If you follow a keto diet or want to make these beauties 100% sugar-free you can use sugar-free dark choc and a granulated sweetener such erythritol, xylitol or Natvia.

HEALTHY CHOCOLATE BLONDIES
Ingredients:
1 cup almond flour/meal
1/4 cup coconut flour
1/2 cup of coconut sugar or granulated sweetener of choice
1/2 tsp baking powder
1/2 tsp sea salt
1/2 cup dark or sugar-free chocolate chips
1/2 cup crushed nuts of choice ( I used almonds and walnuts)
1 tbsp chia seeds
1/2 cup hulled tahini
1/2 cup of water
1tsp pure vanilla extract
Directions:
In a large mixing bowl combine the flours, coconut sugar, baking powder and sea salt.
In a medium bowl whisk together the chia seeds with your wet ingredients water, vanilla extract, and tahini.
Add the wet ingredients to the dry mix and stir well!
Fold through the choc chips and crushed nuts.
Place mix into a silicon baking dish I recommend using a square or recanted shape.
Bake at 170 degree fan forced for 30 minutes.
Remove when an inserted knife comes out clean (aside from the melted choc).
Let cool completely before slicing.
